Gazpacho and Salad

The first course consisted of baby lettuces topped with gorgonzola crumbs and a tower of red and gold beets with a red wine vinaigrette. It was served with vine-ripened blonde and red tomato gazpacho with croutons and goat cheese basil pesto.
